Meijer Shoppers: Are you using mPerks?

I knew that Kroger did this, but I was recently introduced to mPerks at Meijer.  All you have to do is sign up for a free account, digitally "clip" the coupons you want, and then when you check out at the store- don't forget to enter your phone number to activate the coupons!  As I make my weekly grocery list I sign in to my account to see which coupons I have in my mPerks account.

Homemade Granola....in the Crockpot!

I am VERY intrigued by this one.  It is a granola recipe for the crockpot.  I am hoping to try it out next weekend.


Granola

Ingredients:
3 cups oats
1-½ cups raisins
1 cup Wheat Chex cereal
1 cup walnuts, chopped
¼ cup white chocolate chips
¼ cup brown sugar
2/3 cup honey
1 egg, beaten

Directions:
Pour oats, raisins, cereal, walnuts, chocolate chips, and brown sugar in the slow-cooker. Mix well. In a small bowl, add honey and beat in the egg. Drizzle over the oat mixture and stir until moist. Cover, but leave the lid cracked open and cook on HIGH for 2 hours or on LOW for 4 hours, stirring occasionally. When done, remove crock insert from heat and let cool. This crunchy granola is a great snack or topping for yogurt or ice cream.

Broccoli Slaw Salad

I am always looking for new salads to try out.  This one looks good! I may add sunflower seeds to it too.



Recipe makes enough for 1 or 2 people (depending if it’s the main dish or a side)
1/2 bag of pre-shredded broccoli slaw
1/2 pint grape tomatoes, sliced in half
1/2 can garbanzo beans, rinsed and drained
2 oz crumbled blue cheese or gorgonzola cheese
2-3 TB balsamic vinegar
1 tsp olive oil
salt and pepper to taste
Combine veggies, beans, and cheese in a bowl, gently toss with balsamic vinegar, olive oil, salt and pepper. Top with crumbled cheese.

Spinach and Orzo Salad with Cranberries and Almonds

I am hoping to try this recipe next week for dinner.

Spinach and Orzo Salad Spinach, Almond and Orzo Salad with Cranberries
1 cup whole wheat orzo, uncooked
3/4 cup toasted sliced almonds
about 3/4 of a 6 oz bag of baby spinach, thinly sliced
3/4 cup dried cranberries
4 oz gorgonzola, crumbled
For the dressing:
2 tablespoons toasted sesame seeds (Toast in a nonstick skillet over med heat for about 5 minutes)
1 tablespoon poppy seeds
1-2 tablespoons sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/2 cup cider vinegar
1/3 – 1/2 cup light flavored oil
salt and pepper to taste
Cook orzo according to instructions on package, set aside to cool completely.
To prepare dressing,  whisk together in a small bowl (or shake in a jar) sesame seeds, poppy seeds, sugar, onion, paprika, vinegar, oil and pinches of salt and pepper.
In a large salad bowl combine orzo, almonds, spinach and cranberries. Gently toss ingredients with 1/3-1/2 amount of dressing, add more or less to your liking.
Add crumbled gorgonzola and gently toss again.
Serve immediately at room temperature or slightly chilled.

Chocolate Banana Pops

The recipe for these came in my latest edition of Everyday Food Magazine. My son and I decided to try them out today!





4-5 ripe bananas cut into 2 inch pieces
6 oz semisweet chocolate chips (about 1 cup)
1 tablespoon of sprinkles
toothpicks


1. Insert 1 toothpick (I used sucker sticks from a local craft store  so they are easier to hold) into each banana piece.  Arrange bananas, toothpick side up, on parchment-lined baking sheet and freeze until firm (2 hours)


2. In a medium microwave safe bowl heat chocolate chips in 10-second increments, stirring between each, until melted and smooth.  Working quickly, dip each banana piece in the chocolate, shake of excess, and cover with sprinkles.  Chocolate should set quickly, but freeze if necessary to harden coating before serving.

Reese's Peanut Butter Cup Popcorn


8 cups plain popcorn 
Fine salt
1/2 cup honey
1/3 cup granulated sugar
1/2 cup natural peanut butter
1/2 teaspoon vanilla extract
1/2 cup milk chocolate chips, melted
1 1/2 cups Mini Reese's Peanut Butter Cups



1. Place the popped popcorn in a large bowl and salt to taste. Set aside.
2. Mix the honey and sugar in a small saucepan and bring to a boil. Let it simmer for about 2 minutes, then remove from the heat and add the peanut butter. Stir vigorously until all the peanut butter is melted, then mix in the vanilla extract.
3. Immediately pour the peanut butter caramel over the popcorn and gently stir with a long-handled wooden spoon until it's all coated. Spread popcorn on a large baking sheet. Drizzle popcorn with melted chocolate and let sit until chocolate hardens. Stir in the Mini Reese's Peanut Butter Cups.

Bacon, Eggs, and Toast Cups


  • 3 tablespoons unsalted butter, melted
  • 8 slices white or whole-wheat sandwich bread
  • 6 slices bacon
  • 6 large eggs
  • Coarse salt and ground pepper





  1. Preheat oven to 375 degrees. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, with a 4 1/4-inch cookie cutter, cut into 8 rounds. Cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. Use extra bread to patch any gaps. Brush bread with remaining butter.
  2. In a large skillet, cook bacon over medium, until almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1 bacon slice in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.

Cook's Note

Standard muffin pans come in 6- or 12-cup size; if baking 6 items in a 12-cup pan, leave empty space in between. Nonstick pans are nice but not essential. Beware of very thin pans, which often lead to burning. Place pans on a baking sheet to make them easier to get in and out of the oven.

Garlic Lovin' Salmon

2 tablespoons of butter
3-4 garlic cloves, pressed
2 teaspoons lemon pepper seasoning
4 (4 oz) salmon fillets
lemon wedges


Garlic lovin' salmon - 4 ingredients, 10 minutes.


  1. In a large skillet over medium-high heat, melt butter.
  2. Stir in garlic.
  3. Sprinkle salmon fillets on both sides with lemon pepper seasoning.
  4. Place fish in the pan and cook on both sides for approx 3-5 minutes per side, until fish flakes when tested with a fork.
  5. Garnish with lemon wedges and serve.

Chili Mac

I can't remember where I found this one.  I have it written down on a piece of paper and shoved in my cook book.  I usually add frozen mixed veggies to this and a teaspoon or so of sugar for sweetness.



8 oz. elbow macaroni
1 onion, minced
1 tsp. chili powder
1 can kidney beans
1 lb. ground beef
1 c. water
1 tsp. salt

Cook macaroni. Brush large skillet with oil, add ground beef and onion, brown. Add macaroni, water, chili powder, salt and kidney beans. Cover, simmer for 15 minutes. Stir occasionally. 

Corn Casserole

After having corn pudding this weekend from City BBQ...the family was instantly hooked.  So we are giving this casserole from Paula Deen a try.  She tops her's with shredded cheese, but we like it without.  





1 can whole kernel corn, drained
1 can cream-style corn
1 package Jiffy corn muffin mix
1 cup sour cream
1/2 cup butter, melted


Preheat oven to 350 degrees.


In a large bowl combine the cans of corn, Jiffy mix, melted butter, and sour cream.  Pour into a greased 13x9 casserole dish.  Back for 45 minutes or until golden brown.  Let stand for 5 minutes then serve warm.

Spinach Lasagna Roll-ups


Ingredients: 

9 lasagna noodles, cooked

10 oz frozen chopped spinach, thawed and completely drained

15 oz fat free or part skim ricotta cheese

1/2 cup grated Parmesan cheese

1 egg

salt and fresh pepper

32 oz  spaghetti sauce

9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

 

Directions: 
    Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

    Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Rollcarefully and place seam side down onto the baking dish. Repeat with remaining noodles

    Broccoli Couscous

    I have posted about couscous before but here is a couscous recipe with broccoli that I had tried a few times.  I sort of just made it up.  It is really quick and easy and a great alternative to rice.


    10 oz of fresh or frozen broccoli (cut up)
    14 oz reduced-sodium fat-free chicken broth
    1 cup uncooked couscous
    Salt and pepper to taste


    1. If you are using frozen broccoli- thaw and drain it first
    2. Season chicken broth with salt and pepper and bring to a boil
    3. Stir in couscous and broccoli, cover and remove from heat.  Let is stand of 5 minutes or until the liquid is absorbed.  
    4. Fluff with a fork and serve


    I have seen other recipes that add chickpeas to this or even lemon juice.  Play around with the ingredients!
