Chicken and Veggies Foil Packet

Ingredients
4 boneless, skinless chicken breast halves
2 green and/or red peppers, cut into strips
1 lb red potatoes, thinly sliced
1/4 cup bbq sauce
1 tablespoon orange juice
1/4 teaspoon salt
1/4 teaspoon pepper








DIRECTIONS
  1. Coat the unheated grill rack with cooking spray. Preheat the grill.
  2. Place each chicken breast in the center of a 12" x 18" piece of foil. Evenly top with the bell peppers and potatoes.
  3. In a small bowl, combine the barbecue sauce, orange juice, salt, and black pepper until blended. Evenly drizzle over the chicken and vegetables.
  4. Bring up 2 long sides of each piece of foil and double-fold with a 1"-wide fold. Double-fold each end to form a packet.
  5. Place the packets, seam side up, on the rack and grill for 25 minutes, or until the vegetables are tender and a thermometer inserted in the thickest portion of a breast registers 160°F and the juices run clear.

Popcorn Balls


  • Ingredients
  • 1 tablespoon vegetable oil
  • 1/2 cup unpopped popcorn
  • 6 tablespoons butter
  • 5 cups miniature marshmallows



Directions

  1. Grease a 9x13 inch baking dish. Set aside.
  2. Add vegetable oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Put popcorn in prepared pan.
  3. Melt butter In a medium saucepan over low heat. Stir in marshmallows and cook until melted, stirring constantly. Pour marshmallow mixture over popcorn and mix with spoon to coat evenly.
  4. Let mixture cool slightly. Smear butter on your hands or spray with non-stick cooking spray. Mix popcorn with your hands so that it is evenly coated.
  5. Form popcorn into 8 balls.

Corn Dog Muffins

I saw these on Pinterest awhile back ago.  I try not to cook hot dogs too often, but in honor of opening day this week- we are gonna have these as part of a kid-friendly, baseball themed dinner this week.


2 (8.5 ounce) packages corn bread mix
2 Tablespoons brown sugar
2 large eggs
1 1/2 cups milk
9 whole hot dogs, diced
1 cup grated cheddar cheese
ketchup, mustard, sour cream, honey mustard (for dipping)







1. Preheat oven to 400°F. Lightly grease mini muffin tins.
2. In a large bowl, stir together cornbread mix and brown sugar. In a small bowl whisk together eggs and milk, and then stir into dry mixture until moistened. Mix in hot dogs and cheese.
3. Spoon a good Tablespoonful into muffin tins, making sure you get some hot dog in each spoonful.
4. Bake 10 to 12 minutes, or until golden brown. Let cool for about 10-15 minutes in the pan before removing. For easy removal, cut around outsides of the muffins, then tip upside down onto a large cutting board & urge the muffins out using a knife to tap the bottoms of the muffin tins. They should slide right out.
5. Serve warm with desired dipping sauces
Tips:
*Alternately, you can use your favorite cornbread mix, follow the instructions on the box, add in 1 cup of cheddar cheese and mix in chopped hot dogs too. If your favorite cornbread mix doesn't have a sweet element to it, add in 2 Tbsp. brown sugar.
*You can use paper liners if you'd like.

Season ground beef or ground turkey with salt, pepper and (our family’s fav) Montreal steak
seasoning. Broil burgers in the oven or on the grill. I buy frozen sweet potato fries and pop them
in the oven – super easy!



Dessert: Nutella Rice Krispie Treats

Use your favorite recipe and just add 1 cup of Nutella when melting butter and marshmallows
together. So gooey and delicious!

Tortilla Pie


 



Ingredients


4 flour tortillas (10 inches)
2 tablespoons canola oil
1 large onion, diced
1 jalapeno chile, minced (remove seeds and ribs for less heat) -optional
2 garlic cloves, minced (I use about 1 tbsp of jarred garlic I keep in the fridge)
1/2 teaspoon ground cumin (I like more, so add more if you want!)
Coarse salt and freshly ground pepper
2 cans (15 ounces each) black beans, drained and rinsed
12 ounces beer, or 1 1/2 cups water (I’ve tried it both ways and both are equally delicious – stick with
water and you won’t miss any flavor)
1 package (10 ounces) frozen corn
4 scallions, thinly sliced, plus more for garnish
8 ounces cheddar cheese, shredded (2 1/2 cups)
*If I have bell peppers, I’ll chop and add these, too.


Directions
1. Preheat oven to 400 degrees.
2. Heat oil in a large skillet over medium heat. Add onion, jalapeno, garlic, and cumin; season with
salt and pepper. Cook, stirring occasionally, until softened, 5 to 7 minutes.
3. Add beans and beer/water, and bring to a boil. Reduce heat to medium; simmer until liquid has
almost evaporated, 8 to 10 minutes. Stir in corn and scallions, and remove from heat. Taste and
adjust for seasoning.
4. Fit a trimmed tortilla in bottom of springform pan; layer with 1/4 of the beans and 1/2 cup of
cheese. Repeat three times, using 1 cup cheese on top layer. Bake until cheese melts, 20 to 25
minutes. Remove side of pan; sprinkle pie with scallions. To serve, slice into wedges.
*Make sure you put a cookie sheet on the rack below the spring form pan because it does spill a little!

Tilapia with Green Beans


Tilapia with Green Beans
 



Bake tilapia in the oven at 375 for about 25 minutes.


Trim green beans (fresh are best) and sauté in pan with olive oil, garlic, salt and pepper. I like to
add a little bit of red pepper flakes, too. Saute until softened, but still crisp, about 10-15 minutes.

Baked Chicken Parmesan




Ingredients
2 tbsp olive oil
2 cloves garlic, crushed
hot red pepper flakes, to taste
6 boneless skinless chicken breasts
2 cups marinara sauce
1/4 cup chopped basil
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 (5-oz) package garlic croutons


Directions
In baking dish, pour a little marinara sauce at the bottom, add garlic, then place chicken breasts and pour
remaining sauce over the top. Put half of the cheese on top of that, then the croutons, then the rest of the
cheese. You can eliminate the basil if you want, by using sauce with basil in it. Bake until cheese is melty
and chicken is cooked thoroughly, about 45 minutes.

Veggie Fried Rice

Veggie Fried Rice Recipe


1 bag quick cooking brown rice
1 (8 oz) package fresh sugar snap peas
4 green onions, cut into 2 inch pieces
1/2 cup matchstick cut carrots
1 tablespoon freshly grated ginger
Vegetable cooking spray
2 garlic cloves, minced
2 large eggs, lightly beaten
3 tablespoons lite soy sauce
2 teaspoons dark sesame oil



  1. 1. Cook rice according to package directions; drain well.
  2. 2. Sauté peas, green onions, and carrots in a large nonstick skillet coated with cooking spray over medium-high heat 3 minutes or until crisp-tender. Add ginger and garlic; sauté 1 minute. Add rice, and cook 2 minutes or until thoroughly heated. Push rice mixture to sides of pan, making a well in center of mixture.
  3. 3. Add eggs to center of mixture, and cook, stirring occasionally, 1 to 2 minutes or until set. Stir eggs into rice mixture. Stir in soy sauce and sesame oil.

Homemade Chicken Nuggets

 



3 cups corn flakes
1/3 cup grated Parmesan cheese 
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder
pinch of pepper
1 lb. boneless chicken breasts
1/4 cup flour
2 large eggs, beaten

-Cut chicken breasts into nugget-sized pieces. Set aside.
-Preheat oven to 425 degrees. Grease cookie sheet.
-Put flakes in large plastic bag and crush to fine texture. Pour into medium-sized bowl. Add Parmesan cheese, salt, onion powder, garlic powder, and pepper to corn flakes.
-Place eggs in separate small bowl.
-Place flour in separate small bowl.
-To bread chicken, coat chicken piece in flour, shaking off excess. Dip in the egg, coat in corn flake mixture.
-Arrange chicken on prepared baking sheet til golden brown (about 12-15 minutes).
