Pan Seared Tilapia Fish Tacos


Makes 4 tacos (can be doubled)
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
olive oil
2 limes
2 6-ounce tilapia fillets (or other mild white fish—see Kitchen Notes)
salt and freshly ground black pepper
4 6-inch flour tortillas
Prepare the fish. Mix the chili powder, cumin, cayenne pepper, 1 tablespoon olive oil and the juice of 1 lime in a small bowl. Arrange the fish fillets in a glass baking dish or on a nonreactive platter (no metal). Brush fillets on both sides with spice mixture and season with salt and pepper. Let marinate at room temperature for 15 to 30 minutes.
Heat a large nonstick skillet over a medium flame. Add enough olive oil to coat the bottom and sauté the fillets until browned and cooked through, about 4 minutes per side. Transfer to a plate and break into bite-sized chunks with a fork.
Warm the tortillas. Heat a large dry skillet over medium-high flame and slightly brown the tortillas one at a time, about 30 seconds per side. You can also nuke them in the microwave (they won’t brown, but they’ll be nice and pliable) or if you want to live authentically and dangerously, you can lay them directly over a gas burner, browning them briefly and carefully on both sides.
Assemble the tacos. Divide fish among four tortillas and add your favorite toppings. Cut the second lime in wedges and serve with the tacos.

Tomato, Mozzarella, & Pesto Paninis




This recipe comes from Ina Garten, The Barefoot Contessa at Home.  Have you ever watched her show? Yes, I want to live in her house and have her cook for me every day.  Her and her husband are just the cutest!



  • 2 large ripe beefsteak tomatoes
  • 1 (16-ounce) ball fresh mozzarella
  • 12 slices bakery white bread, sliced 1/2-inch thick
  • about 1 cup pesto
  • salt
  • balsamic vinegar
  • olive oil
Preheat grill.

Meanwhile, core the tomatoes and slice the tomatoes and mozzarella 1/4-inch thick.

Spread the bread slices out on a work surface.  Pour olive oil into a small bowl, and using a pastry brush, brush each bread slice with the oil.  Flip the slices over, and spread each slice evenly with pesto.  On half the bread, place a layer of mozzarella (about 2 slices per sandwich), followed by a layer of tomato.  Sprinkle the tomatoes with kosher salt and drizzle with balsamic vinegar.

Oil the grates of the grill, and working 3 sandwiches at a time, lay all the bread slices on the grill, and close the cover.  After 2-3 minutes, you should have grill marks, make sandwiches, by laying the pesto-only slices on top.  Weight the sandwiches down with either bricks wrapped well in foil, or heavy, oven-safe skillets.  Alternatively, you could lay a baking sheet on top and weight that down with bricks.

Grill an additional 1-3 minutes, or until the mozarella starts to ooze.  Repeat with remaining sandwiches.  Cut each sandwich in half, and serve warm.

Chicken Parmesan Baked Pasta

I love that this recipe has a shortcut- using chicken tenders.  Yes, I plan on just using Tyson chicken tenders out of the freezer.   As a working Mom I am always looking for shortcuts.  I am curious if I can find a way to make it even easier with store bought spaghetti sauce....  

  • 1 (28-oz) can whole peeled fire-roasted tomatoes
  • 1 Tbs olive oil
  • 6 garlic cloves, minced
  • 1 tsp minced fresh oregano (or 1/4 tsp dried)
  • 1/8-1/4 tsp crushed red pepper flakes
  • kosher salt and freshly ground black pepper
  • 2 cups water
  • 1 - 1 1/2 cups low-sodium chicken broth
  • 12 oz. pasta shapes (ziti, penne, etc)
  • 2 oz grated Parmesan cheese (about 1 cup)
  • 4 oz shredded mozzarella cheese (about 1 cup)
  • 1 lb. cooked chicken tenders, chopped into bite-sized pieces
  • 1/4 cup chopped fresh basil.
Preheat the oven to 475 degrees.

Pulse the tomatoes and their juices in the food processor until coarsely ground, about 12 pulses.

Cook the oil, garlic, red pepper flakes, and 1/4 teaspoon of salt in a 12-inch skillet over medium-high heat until fragrant, about 1 minute.  Stir in the tomatoes, water, 1 cup of the broth, and the pasta.  Bring to a vigorous simmer, cover, and cook until pasta is tender, 15 to 18 minutes, stirring often.

Stir in 3/4 cup of the Parmesan, 1/4 teaspoon of pepper, and the chopped chicken.  Taste and adjust the seasonings if needed.  If the pasta seems dry, stir in the remaining 1/2 cup of broth.  Transfer to a baking dish and sprinkle with mozzarella and remaining Parmesan.  Bake 5 to 10 minutes, or until the cheese is melted and bubbly.  Sprinkle with basil and serve.

Balsamic Strawberry & Goat Cheese Flatbread

For our wedding anniversary we went to Cheesecake Factory where we got a flat bread with pears, blue cheese, caramelized onions, and arugula as an appetizer.  Delicious! I was on the lookout for other sweet/savory flat bread combinations and came across this one.  It would be a great appetizer for a party 



  • 1 lb of pizza dough
  • zest and juice of 1 lemon
  • olive oil, for drizzling
  • 1 cup thinly sliced strawberries
  • about 1/2 cup crumbled goat cheese
  • good balsamic vinegar
  • 1-2 basil leaves, minced
Preheat the oven to 375 degrees.

On a well-floured surface, sprinkle about half the lemon zest over the pizza dough.  Knead it into the dough until well-incorporated, and then press the dough into a rectangle that measures about 12x9 inches (it doesn't have to be exact).  Drizzle with olive oil and about 1 tablespoon of the lemon juice.

Sprinkle the strawberries over the dough, followed by the goat cheese, and then drizzle lightly with the vinegar.

Bake 25-30 minutes, or until the dough is cooked through and just turning golden.  Drizzle with a little more balsamic vinegar and sprinkle with basil.  Cut into squares and serve warm or at room temperature.

Busy Bag-Toddler Games

I came across a great blog- http://therigneys.wordpress.com - with a great idea.  This lady got a group of friends together and each person had to come up with a game for toddlers that met the following criteria:



  • Self-contained.  This way, you can just grab a bag and GO! (without having to add a number of supplies to the bag in order to make it useful.)
  • Transportable.  Yes, they will definitely be used at home, but I want to be able to grab a few bags to take to a restaurant, a waiting room, plane trips, car rides, etc.
  • Convenient.  None of the bags will have supplies that require major set-up or clean-up: (no paint, watercolors, liquids, sand, dirt, etc.)
  • Inexpensive. I didn’t want anyone spending too much money on this project!
  • Easy to Make: I didn’t want anyone spending hours and hours and hours making their activity.
  • Re-usable. I want these activities to last a while so that our other children can use them in the future.  Therefore, I avoided activities where you would have to buy new supplies to re-stock the bag.  This is why lamination is important for some of the activities.
Each person had to make 20 of their "game" and then bring them to swap with others.  They each went home with 20 different games for their kids.  What a great idea!

Mexicorn Dip

I am always looking for new dips/apps to try and I found this one from Goodness Gracious and think it is perfect for Cinco de Mayo!

Mexicorn Dip

2 cans (11 Oz. Can) Mexicorn, Drained
1 can (4 Oz. Can) Chopped Green Chiles
1 whole Bell Pepper, Chopped
3 whole Green Onions, Chopped
2 whole Jalapenos, Chopped (without Seeds)
8 ounces, weight Shredded Cheddar Cheese
1 cup Sour Cream
1 cup Mayonnaise


Combine all ingredients and chill before serving.  Serve with Fritos or tortilla chips!

Broccoli Chicken Pasta


¼ cup light olive oil
2 garlic cloves, minced
½ pound boneless, skinless chicken breasts cut into 1” cubes
1 ½ cups small fresh broccoli flowerets
1 cup chicken broth
½ teaspoon salt, or to taste
1 teaspoon cornstarch
¾ cup cherry tomatoes cut in half
2 teaspoons fresh basil leaves chopped (or 1 teaspoon dried basil)
½ pound bow-tie pasta
Grated parmesan cheese (optional)

Cook pasta according to package directions and drain.

Meanwhile, in a large skillet, heat the oil over medium heat. Add the garlic and sauté for about one minute without browning. Add the chicken and sauté until almost cooked through. Add the broccoli and sauté until crisp tender. Combine broth, cornstarch and salt in a cup. Stir well until cornstarch is completely combined and add to chicken mixture. Cook on medium-low for about 3-4 minutes, stirring constantly until broth is thickened . Add the cherry tomatoes and basil. Stir and turn off the heat.

Toss the cooked pasta with the chicken mixture. Serve with parmesan cheese if desired.

Sloppy Joes


1 pound lean ground beef
1 onion chopped finely
½ teaspoon salt
¾ cup ketchup
1 Tablespoon vinegar
1 teaspoon sugar
1 Tablespoon mustard

In a large skillet, brown beef and onions. Drain. Add remaining ingredients and simmer 30 minutes. Serve on hamburger buns.

Mini Chicken Potpies

Chicken Mixture
1 tablespoon vegetable oil
1 lb. boneless skinless chicken breasts, cut into small pieces
1/2 cup onion, chopped
1/2 cup chicken broth
1 cup frozen peas and carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground thyme
1 cup shredded cheddar cheese


Baking Mixture
1/2 cup Original Bisquick Mix
1/2 cup milk
2 eggs


Impossibly Easy Mini Chicken Pot Pies

1. Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.


2. In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Add onion and chicken broth; heat to simmering. Add frozen vegetables and seasonings. Heat until hot, stirring occasionally until almost all liquid is absorbed. Cool 5 minutes; stir in cheese


3. In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup chicken mixture. Spoon 1 tablespoon baking mixture onto chicken mixture in each muffin cup.


4. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.

Sauteed Zucchini w/ Lemon-Thyme Chicken


  • 1 tablespoonlemon zest
  • 1 tablespoonchopped fresh thyme
  • 1 poundchicken cutlets
  • 1/4 teaspoonsalt
  • 1/4 teaspoonfreshly ground black pepper
  • 1 tablespoonolive oil
  • 1/2 cupwater
  • 1/3 cupuncooked couscous
  • 3/4 poundzucchini (about 2 medium), halved lengthwise and cut crosswise into 1/2-inch pieces
  • 1/2 poundyellow summer squash (about 2 medium), halved lengthwise and cut crosswise into 1/2-inch pieces
  • 1/4 cupfat-free, low-sodium chicken broth
  • Chopped fresh thyme, for garnish
1. Place the lemon zest and thyme in a small bowl; toss. Sprinkle the chicken with salt and pepper on both sides. Sprinkle half of the lemon-and thyme mixture evenly onto one side of each cutlet. Heat the olive oil in a large nonstick skillet over medium-high heat; cook the chicken, herb side down, turning after 2 minutes. When the chicken is golden and cooked through (about 4 minutes), transfer to a cutting board. Cover chicken, and keep warm.
2. Bring 1/2 cup water to a boil in a small saucepan; gradually stir in the couscous. Remove pan from heat; cover and let stand 5 minutes. Fluff with a fork. Cover couscous, and keep warm.
3. Sauté the zucchini and squash (in the same skillet used for the chicken) over medium heat, stirring frequently, until golden and tender (about 4 minutes). Stir in the remaining lemon-and-thyme mixture, chicken broth, and couscous.
4. Spoon the couscous mixture evenly among 4 plates; top each with a chicken cutlet. Garnish with thyme.

Parmesan-Crusted Tilapia

Parmesan-Crusted Tilapia

I love that this recipe includes only 5 ingredients!



Ingredients

  • 3/4 cup freshly grated Parmesan cheese
  • teaspoons paprika
  • tablespoon chopped flat-leaf parsley
  • tilapia fillets (about 1 pound total)
  • lemon, cut into wedges

  • Directions
  • Preheat the oven to 400 degrees . In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.

Oven Baked Chicken Fajitas

I would love to make these on the grill...but we don't have a grill, so an oven will have to do!  Serve this up with tortillas, sour cream, and guacamole!



1 pound boneless, skinless chicken breasts, cut into strips
2 Tbsp vegetable oil
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp salt
1 (15 oz) can diced tomatoes with green chilies
1 medium onion, sliced
1 large bell pepper, seeded and sliced 




Instructions
  1. Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
  2. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt
  3. Drizzle the spice mixture over the chicken and stir to coat.
  4. Next add the tomatoes, peppers, and onions to the dish and stir to combine.
  5. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.
