Sausage, Potatoes, and Peppers Skillet

We tried this one out for dinner this week.  It was great because it was all cooked in one skillet and made clean up easy.  The flavors were great- even using turkey kielbasa.  I sort of combined a few recipes I found to create this one:





4-5 red potatoes, diced
Green, yellow, and red peppers, julienned
1 medium onion, sliced
1 garlic clove, minced
1/2 cup Italian Dressing
1 lb. sausage (I used turkey kielbasa), sliced
1 tablespoon reduced sodium soy sauce
Olive oil


Cook the red potatoes in a little bit of olive oil for 5-7 minutes.  Add the peppers, onions, garlic, and 1/4 cup of the Italian dressing.  Cook for 5-7 minutes, stirring often.  Add the sausage and the remaining 1/4 cup of Italian dressing.  Cook on medium for 8-10 minutes or until sausage is heated through and veggies are crisp-tender.  Sprinkle with soy sauce and serve.
