Overnight No Cook Oatmeal

I was very skeptical of this...as I am not sure how a "cold porridge" really sounds to me...but I was pleasantly surprised with this creamy, cool texture.  This was very easy to make and if you use the right containers/jars, it would be quick and easy to grab out of the fridge on your way to work.  I like the idea of this cold oatmeal during the hot summer months.

Refrigerator Oatmeal



All flavors start with the same basic ingredients and procedure.

Here is the base: Assemble these ingredients & supplies:
  • old fashioned rolled oats (not instant, quick, or steel-cut)
  • Greek yogurt (regular yogurt is thinner; if you use it, you'll need to reduce the amount of milk); 
  • milk (any kind will work)
  • chia seeds (I did not have chia seeds....so I reduced the amount of milk I used)
  • half pint (1 cup) mason jars (I just used a tupperware container)
  • desired sweeteners (see flavor combinations)
Put all of this in a jar, place the lid on, and shake.

Now add Flavor Combinations:

Mango Almond
  • 1/4 teaspoon almond extract
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)
  • 1/4 cup diced mango (approx. half of a small mango)

Blueberry Maple
  • 2 teaspoons maple syrup (more or less to taste)
  • 1/4 cup blueberries (or enough to fill jar)

Apple Cinnamon
  • 1/2 teaspoon cinnamon
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)
  • 1/4 cup unsweetened applesauce, or enough to fill jar

Banana Cocoa
  • 1 tablespoon cocoa powder
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)
  • 1/4 cup diced ripe banana, or enough to fill jar (approx. half of a small banana)

Banana Peanut Butter
  • 1 tablespoon peanut butter (may substitute PB2 powdered peanut butter)
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)
  • 1/4 cup diced ripe banana, or enough to fill jar (approx. half of a small banana)

Raspberry Vanilla
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon raspberry jam, preserves, or spread
  • 1/4 to 1/3 cup raspberries (cut each berry in half), or enough to fill jar

These keep for up to 2 days in the fridge.
