I found this recipe and tried it out this morning. It was a hit! I did not have bananas, so I just used blueberries. I also didn't have vanilla paste- so just used vanilla extract. Next time I want to try this recipe with apples and walnuts. You can substitute in any fruit you would like and add nuts for an extra crunch!
1 cup quick cooking oats
1/2 tsp baking powder
3/4 tsp cinnamon powder
pinch of salt
1/4 cup maple syrup
1 cup milk
1 egg, lightly beaten
1 tbsp oil
1 tsp vanilla bean paste
1 1/2 - 2 ripe bananas, sliced into 1/2 inch thick pieces
3/4 cup blueberries, divided
Preheat oven to 375 F. Lightly grease a 1 1/2 quart baking dish.
In a bowl, mix together oats, baking powder, cinnamon and salt. In another bowl, whisk together maple syrup, milk, egg, oil and vanilla bean paste.
In your baking dish arrange the bananas in a single layer. Sprinkle half the blueberries on top. Give the oat mixture a stir and spread in an even layer on top of the fruit. Give the egg mixture a quick whisk to make sure the vanilla bean paste hasn't settled at the bottom. Pour the egg mixture on top of the oats. Sprinkle the remaining blueberries. Bake for 35 minutes or until oatmeal is set. Let cool 10 minutes and enjoy!
