Crockpot Beef Stroganoff


  • 1 pound cubed beef stew meat
  • 1 (10.75 ounce) can condensed golden mushroom soup
  • 1/2 cup chopped onion
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup water
  • 4 ounces cream cheese
Serve with egg noodles





  1. In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.
  2. Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving.
  3. Serve with cooked egg noodles.

Homemade Granola....in the Crockpot!

I am VERY intrigued by this one.  It is a granola recipe for the crockpot.  I am hoping to try it out next weekend.


Granola

Ingredients:
3 cups oats
1-½ cups raisins
1 cup Wheat Chex cereal
1 cup walnuts, chopped
¼ cup white chocolate chips
¼ cup brown sugar
2/3 cup honey
1 egg, beaten

Directions:
Pour oats, raisins, cereal, walnuts, chocolate chips, and brown sugar in the slow-cooker. Mix well. In a small bowl, add honey and beat in the egg. Drizzle over the oat mixture and stir until moist. Cover, but leave the lid cracked open and cook on HIGH for 2 hours or on LOW for 4 hours, stirring occasionally. When done, remove crock insert from heat and let cool. This crunchy granola is a great snack or topping for yogurt or ice cream.

Slow Cooker Beef and Tomato Stew

It is cold and snowy here today...and I just got my new edition of Every Day Food.  This one looks like a great recipe to try out!

1 tablespoon extra virgin olive oil
1 large yellow onion, diced
3 medium carrots, cut into 1/4 inch rounds
3 celery stalks, cut in 1/4 inch pieces
2 lbs beef chuck, fat trimmed, cut into 1 inch pieces
1 can (28oz) crushed tomatoes
1 cup low-sodium chicken broth
3 garlic cloves smashed and peeled
coarse salt and black pepper

Optional:
6 tablespoons Greek yogurt
1/3 cup chopped parsley
4 cups cooked brown rice or bulgur

1. In a large skillet, heat oil over medium.  Add onion, carrots, celery and cook, stirring frequently, until veggies are softened (about 10 minutes)

2. Transfer mixture to a 5-6 quart slow cooker and add beef, tomatoes, broth, garlic, 1 teaspoon salt, 1/4 teaspoon pepper.

3. Cover and cook on high for 6 hours, stirring occasionally.

4. Serve over brown rice (or bulgur) and top with Greek yogurt and parsley.

*To store: Put in an air tight container in the fridge for up to 3 days or in the freezer for 3 months.

Easy Crock Pot Chili

Here is the easiest and yummiest chili recipe. Thanks to my Mom for passing it along to me!

1 lb ground beef
1 small onion (diced)
1 can crushed/diced tomato
1 can chili magic (I like the Texas Medium)

Sometimes I add a finely diced green pepper too

Brown the ground beef and saute the onion. Drain access fat. Add beef, onion, chili magic, tomato (do not drain) to crock pot and simmer on low all day.

I like to serve it with shredded cheese and crackers. I also double or triple it for guests. Enjoy!

Chicken Tortilla Soup (Crock Pot Recipe)


Slow-Cooker Chicken Tortilla Soup Recipe

This is my favorite chicken tortilla soup recipe ever! I like to add new things all of the time like black or pinto beans. I serve it with tortilla chips, sour cream, and even more cilantro. AND....it is made in the crock pot. So easy!

  • 1 pound shredded, cooked chicken
  • 1 (15 ounce) can whole peeled tomatoes, mashed
  • 1 (10 ounce) can enchilada sauce
  • 1 medium onion, chopped
  • 1 (4 ounce) can chopped green chile peppers
  • 2 cloves garlic, minced
  • 2 cups water
  • 1 (14.5 ounce) can chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 (10 ounce) package frozen corn
  • 1 tablespoon chopped cilantro


Directions

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours
